Vivinal® GOS is an ideal oligosaccharide ingredient for use in the production of infant formula (IF), follow-on formula (FOF) and growing-up milk (GUM). Its dairy origin and product characteristics make it a logical choice for use in infant nutrition products.

Vivinal® GOS Syrup is best suited for wet processed infant formulas, while the powder products are developed for dry blending processes. Vivinal® GOS is easy to handle and incorporate in various applications. The features of Vivinal® GOS demonstrate different functional properties.

Appearance 

The appearance of both syrup products containing Vivinal® GOS can be characterized as clear and transparent.

The appearance of Vivinal® GOS Powder WPC in solution form is somewhat opaque and yellowish as it contains protein and fat from the protein source. In comparison to Vivinal® GOS Powder WPC, Vivinal® GOS Powder Maltodextrin and Vivinal® GOS Powder are less opaque and a bit whiter in colour.

 Solubility

Vivinal® GOS is fully soluble in water. The product dissolves excellently in milk and other dairy products and does not influence the viscosity of a beverage.

Taste 

The taste of Vivinal® GOS syrup can be characterized as neutral to slightly sweet. Vivinal® GOS does not affect the taste or texture of the final product and can therefore be easily used in several applications.

In comparison to Vivinal® GOS Syrup, Vivinal® GOS Easy Drying Syrup and GOS® Powder are not as sweet as most monosaccharides are removed.

The taste of Vivinal® GOS Powder WPC is described as bland or sweet without an off-flavour. The taste of Vivinal® GOS Powder Maltodextrin is described as neutral to slightly sweet.

Heat stability 

The galacto-oligosaccharide fractions in all Vivinal® GOS products are very stable at high temperatures. Pasteurization, sterilisation and storage even at low pH levels do not affect Vivinal® GOS characteristics such as galacto-oligosaccharides content and composition. These remain stable during the shelf life of 18 months.

Vivinal® GOS Syrup, Vivinal® GOS Easy Drying Syrup, Vivinal® GOS Powder and Vivinal® GOS Powder Maltodextrin are very stable. As Vivinal® GOS Powder WPC contains whey protein, heat stability could be affected, but the oligosaccharide fraction always remains constant.
